The condition of the fish upon arrival,
along with a trusted relationship with our fishmonger, is essential.
That’s why we source our fish from a long-standing fishmonger,
who selects only seafood caught by our trusted fishermen.
We use Akita Komachi rice from Yamagata, known for its low sugar content and minimal stickiness.
To prevent any bran aroma, our rice is milled to retain as large grains as possible.
It is then washed at a precise water temperature and soaked carefully
to ensure the sweetness does not become overpowering.
Additionally, we adjust the cooking method according to temperature and humidity,
ensuring a consistently perfect shari every time.
We use the same kombu (kelp), vinegar, and salt throughout our preparation process—
whether for curing fish, making dashi (broth), or seasoning sushi rice.
For salt, we use Naruto sea salt, rich in minerals,
which enhances the natural umami of the ingredients.
Our kombu is sourced from Rishiri, renowned for its high concentration of umami compounds.
Some may place great importance on sushi dining etiquette,
but at Sushi Tsumugi, we have no rigid formalities.

The restaurant features an elegant seven-seat counter,
crafted from a single slab of exquisite Kiso hinoki.
With its soft, natural tones, the space exudes
both cleanliness and sophistication.
The spacious counter and open prep area,
